Chocolate Easter Eggs | Springtime Of An Adventure

Eggs are a traditional symbol of birth, of life and of new beginnings.

Chocolate Easter eggs are given to celebrate springtime and new arrivals.

For these reasons, it feels very appropriate that we are making chocolate Easter eggs after a few months of Belgian Smaak’s birth – we want to celebrate its arrival.

PRALINÉ CHOCOLATE EASTER EGGS

These tasty treats are delicate, playful and fun. They are small and durable enough that they can be used in all sorts of games such as a chocolate Easter egg race (rolling down a hill), or a chocolate Easter egg hunt (hiding them in the garden).

I made them using two moulds and praliné filling. I poured tempered milk chocolate into the two separate moulds to create the exterior half egg shapes so that I had two hollow sides of a small chocolate egg.

I then used piping bags to add the praliné mixture into the hollows so that they were filled. It’s very important to shake them so that you get the interior even.

You then take the two moulds and smack them together. You can shake them a little bit and I even hit them on the table to ensure that the chocolate joins and the mixture is even.

Then, you stick them in the fridge to harden. When you gently pull off the moulds, you’ve got one whole chocolate egg with praliné filling!

CHOCOLATE EASTER EGGS FILLED WITH SWEETS

Part of the beauty of working with chocolate Easter eggs is that you can include a little surprise inside. This time, I went for little sugary sweets.

I made these eggs a lot bigger than the praliné eggs so that there would be more room for the sweets. Again, I made two hollow egg halves and waited for them to cool so that I could take them out of the moulds.

It was a case then of gently heating the sides of the eggs on a hot oven tray so the chocolate would be slightly melted and stick to the sides of the other half egg to make one egg. Don’t forget to get your sweets in there before you close them over and let them cool!

And there you have our chocolate Easter eggs.

They signal the start of spring and new life and the beginning of our adventure in taste with Belgian Smaak.
